113 g/4 oz very low fat natural cottage cheese
1 teaspoon snipped chives
1/2 small yellow pepper, deseeded and finely chopped
salt and pepper
227 g/8 oz baby asparagus spears
113 g/4 oz wafer thin sliced
lean ham, fat removed (10 Sins on Green)
1. ln a bowl, mix the cottage cheese with the snipped chives and the chopped yellow pepper, then season to taste with salt and pepper.
2. Cook the asparagus spears in in a pan of boiling lightly salted water until they are just tender. Drain in a colander, then refresh in cold water, and drain again and cool.
3. Cut the ham into 20 slices lengthways. Spread each slice of ham with a little of the cottage cheese and pepper mixture, then place an asparagus spear on top and roll up tightly like a cigar. Chill thoroughly in the refrigerator before serving.
