* 1 kg (2 lb) tomatoes, skinned and chopped
* 1/2 cucumber, chopped
* 4 celery sticks, sliced
* 6-8 small gherkins, sliced

* 4 tablespoons vegetable oil
* 2 tablespoons malt vinegar
* 1 teaspoon salt
* 1/2 teaspoon mustard powder
* 1/2 teaspoon caster sugar
* a few shakes of Tabasco sauce (optional)

Place the tomatoes in a bowl with the cucumber, celery and gherkins. Mix all the dressing ingredients together, add to the tomato mixture and stir until well coated. Cover and leave in a cool place for 1 hour. The relish can be kept in a plastic container in the refrigerator for up to 1 week.

Makes: 8-10 portions
