Apple-and-potato-mashIngredients:
500 g/1 lb eating apples
(Elstar)
500 g/1 lb cooking apples
1 kg/2 lb potatoes
25 g/1 oz butter
300 g/10 oz minced beef and
pork
salt and freshly ground pepper
300 g/10 oz chunk smoked
bacon
50 ml/2 fl oz milk
pinch all spice
pinch cinnamon

Preparation. Peel, core and chop the apples. Peel the potatoes and cut into pieces.
• Heat the butter in a pan and stir-fry the mince until brown and tender. Season to taste and put aside until later.
• Put the potatoes in a large pan and just cover with water. Arrange the apples over the potatoes and place the piece of smoked bacon on top. Simmer partly covered for about 25 minutes until bacon is tender.
• Drain and remove bacon from the pan. Cut up bacon into small cubes.
• Heat the milk with the all-spice and cinnamon. To serve. Using the spicy hot milk, mash the potato and apple together until well-blended and creamy. Add the mince and bacon cubes and serve immediately.

Variation
Substitute 250 g/8 oz chicken liver for the mince. Season to taste with salt and pepper and 1 teaspoon chilli sauce. Serve separately with the mash mixture ('stamppot').
