1 x 11 oz packet plain cake mix
1 large cooking apple, peeled, cored and chopped
6 tablespoons apricot jam, sieved
2 tablespoons water
1 red-skinned apple, cored and sliced

1 x 300 g packet plain cake mix
1 large cooking apple, peeled, cored and chopped
6 x 15 ml spoons apricot jam, sieved
2 x 15 ml spoons water
1 red-skinned apple, cored and sliced


Make up the cake mix as instructed on the packet and stir in the apple. Turn into a greased 750 ml/1 1/4 pint non-metal ring mould. MICROWAVE ON HIGH for 4-5 minutes until the cake is dry on top. Turn on to greaseproof paper and leave to cool. Combine the jam and water in a bowl. MICROWAVE ON HIGH for 1 1/2 minutes until boiling. Spread half the jam over the top and sides of the cake. Arrange the apple slices, overlapping, on the top of the cake. Coat with the remaining jam. Allow to cool before serving.
Serves 6-8
