* a knob of butter
* 1 spring onion, finely chopped
* 50 g (2 oz) Cheddar cheese, grated
* 1 wholemeal muffin, split in half
* 1 tbsp good quality tomato sauce

* 1 carrot
* 1 black olive
* frozen peas
* sweetcorn
* salad cress

Melt the butter and saute the spring onion until softened. Stir in the grated cheese until melted.Toast the muffins and divide the tomato sauce between them, then cover with the cheese sauce. Cook under a pre-heated grill until golden (about 2 minutes). If you like, decorate the muffins to look like rabbits.
