* 1 small carrot, peeled and sliced

* 425ml (3/4 pint) stock Salt and pepper
Basic white coating sauce
Ingredients:* 25g (1 oz) Stork margarine
* 25g (1 oz) plain flour
* Salt and pepper
* 275ml (1/2 pint) milk (or milk and water, vegetable, fish or bone stock)
All-in-One Method
1. Place ingredients together in a medium-sized saucepan.
2. Stirring continuously over a moderate heat bring to the boil and cook for 2-3 minutes until thickened, smooth and glossy.

* 40g (1 1/2 oz) Stork margarine, melted
* 1 egg, size 3, beaten

* 2 teaspoons plain flour
* 185 ml (6 fl oz / 3/4 cup) chicken stock
* 1 teaspoon tomato puree (paste)

* 60 ml (2 floz / 1/4 cup) thick sour cream
* sprigs of marjoram, to garnish

1. Place all ingredients in a small bowl over a pan of hot water and leave to melt
2. Beat until smooth and glossy. Serve with ice cream, profiteroles, cooked pears, etc.

* 100ml (4 fl oz) milk

Fast Spicy Meat Sauce for Noodles
Ingredients:* 1 1/2 tablespoons oil
* 2 tablespoons coarsely chopped garlic
* 3 tablespoons coarsely chopped spring onions
* 2 tablespoons coarsely chopped fresh root ginger
* 1 lb (450 g) minced pork
* 1 tablespoon chili bean sauce
* 1 tablespoon dark soy sauce
* 2 tablespoons Chinese rice wine or dry sherry
