Grape bread
Ingredients:
* 1 quantity Deep Pan Pizza Dough, made up to end of step 1
* 30 g (1 oz/5 teaspoons) caster sugar
Filling:
* 375 g (12 oz) red seedless grapes
* 60 g (2 oz / 1/4 cup) caster sugar
To serve:
* extra sugar and pouring cream
1. Preheat oven to 220C (425F/Gas 7). Grease a 25 cm (10 in) deep pan pizza tin or sandwich tin.
2. Spread grapes on a baking sheet and bake in the oven for 10 minutes. Meanwhile knock back risen dough and knead with 30 g (1 oz/5 teaspoons) caster sugar. Divide into 2 equal pieces. Roll each piece to a circle measuring 25 cm (10 in) in diameter. Remove grapes from oven; turn off oven.
3. Place one dough circle in tin. Brush surface with water and spoon over half the grapes. Sprinkle with half the remaining sugar. Lay second piece of dough on top and press gently with fingertips to seal dough around grapes and make small pockets.
4. Spoon remaining grapes over the surface and sprinkle with remain-ing sugar. Cover with plastic wrap and leave to rise for 1 1/2 hours. Preheat oven to 200 C (400F/ Gas 6). Bake in the oven for 20-25 minutes until golden. Cool, then dust with extra sugar and serve with cream.
