Yummy Mini Pitta Sandwiches

Mini-Pitta-SandwichesPitta breads can be split open and then stuffed with some colourful, mouthwatering fillings. However, make sure that you use the mini pittas which contain 4 1/2 Sins each rather than the large pittas, which on average contain 12 1/2 Sins. To make each pitta sandwich, with a sharp knife, split the mini pitta bread down one side to make a pocket. Carefully fill the pitta with one of the suggested fillings below. Store in a sealed transportable container until required.


Grilled chicken and tomato filling

Grill 113 g/4 oz boned, skinned chicken breast (6 Sins on Green) in a grill pan or under a preheated grill until thoroughly cooked and browned. Slice thinly and place inside the mini pitta pocket

(4 1/2 Sins) with some crisp lettuce leaves and halved cherry tomatoes.

Mix 1/2 teaspoon chopped fresh mint with 2 tablespoons very low fat natural fromage frais and spoon over the chicken and salad.

Serves: 1

Sins per serving: 4 1/2 Sins on Original; 10 1/2 Sins on Green

Tip: Use chicken as a Healthy Extra and deduct 6 Sins per serving.

 

Grilled vegetable filling

Put 1/2 sliced red or yellow pepper, 1/4 sliced red onion and 1/2 sliced courgette in a hot cast iron grill pan and cook until tender and slightly charred (or cook under a hot grill). Mix the grilled vegetables with 2 tablespoons very low fat natural fromage frais and a little crushed garlic (optional). Season and stuff into a mini pitta bread pocket (4 1/2 Sins) with some salad leaves.

Sins per serving: 4 1/2 Sins on Original and Green

 

Spicy Bombay potato filling

Cook 1 x 85g/3oz potato (3 Sins on Original) in boiling water until just tender. Drain, cut into chunks and mix with a sprinkling of turmeric, cumin and ground coriander. Add salt and pepper to taste and some chopped fresh coriander, then spoon into the split mini pitta pocket (4 1/2 Sins).

Serves: 1 Sins per serving: 7 1/2 Sins on Original; 4 1/2 Sins on Green

 

Greek lamb filling

Grill 85 g/3 oz very lean lamb (6 1/2 Sins on Green) until cooked to your liking. Cut into cubes and mix with 3 tablespoons very low fat natural yogurt, 1 heaped tablespoon diced cucumber, a few thin red onion rings and a pinch of dried oregano. Season to taste and spoon into a mini pitta pocket (4 1/2 Sins).

Serves: 1

Sins per serving: 4 1/2 Sins on Original; 11 Sins on Green

Tip: Use lamb as a Healthy Extra and deduct 6 Sins per serving.
