Preparing Vegetable Purees in Microwave

Vegetable-Purees-in-Microwave_cThese are very popular now, and many people like to serve a party selection arranged on a platter in a cartwheel effect. Prepare them ahead of the party and arrange on the serving dish. Cover with clear film, then pierce the top and reheat in the microwave for about 6 minutes on full power when required. Allow 6 oz (175g) vegetables per person.

 

Celeriac puree

Cook equal quantities of celeriac and potato until tender.

Drain, then mash to a puree. Season to taste with salt and freshly ground black pepper, and serve topped with a knob of butter.

Sprout puree

Cook the sprouts until tender. Drain well, then transfer to a processor or blender and reduce to a puree with a little single cream, salt and freshly ground black pepper.

Swede puree

Prepare the swede and cook until tender. Drain well, then mash with a potato masher until smooth. Season well with salt and freshly ground black pepper, and stir in a little single cream.

Curried parsnip puree

Cook the parsnips until tender. Drain well, then mash until smooth. Season with salt, freshly ground black pepper, 1/2 level teaspoon curry powder and a little single cream.
