What Flour Is The Most Health-Giving


flour_cFlour is made from the milling of cereals, such as wheat, maize, rice, rye and millet. In Western countries the majority of flour is produced from wheat. Flour was probably man's first convenience food and it is still valued for its versatility and many uses, such as in cakes, pasta and bread, besides its contribution to nutrition.

White flour

White flour is an extraction from whole wheat resulting in the loss of certain nutrients. In some countries, including the UK, the B vitamins thiamin and niacin are added after milling. Calcium and iron may also be added.

Wholemeal flours

The composition of wholemeal, brown and Granary flours varies. Wholemeal flour is highest in fibre and contains more minerals and vitamins than fortified white, although its calcium content may be lower.

Gluten sensitivity

The protein of wheat, rye and barley contains gluten and must be avoided by those intolerant to it. Oats contain a similar protein which does not always affect those who are sensitive.
