Rice_cRice is a major staple carbohydrate for a large sector of the world's population. It is low in fat and a good source of B vitamins, although brown rice is better than white rice. We divide rice into long-grain, medium-grain and short-grain; white and brown. Every type of rice has its own taste characteristics.

 


Nutritional content

Weight for weight rice is lower in protein and calories than bread and wheat flour. Rice contains B group vitamins and is a source of calcium, iron, zinc and other minerals and vitamins, but in quite low levels. Much of the B vitamin and mineral content of rice is in the outer husk of the grain, but some of this is lost in the polishing process. Although there are a number of different varieties of rice, there is very little nutritional difference between them.

Types of rice

Long-grain rice is used for most savoury dishes, with basmati rice particularly prized for its flavour. Short-grain round rice, used for savoury dishes in Thailand and China, is also the rice of choice for puddings. The Italian arborio rice has a starchy, glutinous quality good in risottos.
