Properly cooked, vegetables are very nutritious and an extremely important part of the diet.

The Chinese are masters of the art of vegetable cooking, and stir-frying is the perfect technique for vegetables. This rapid method of cooking over high heat retains all of the virtues of the food and leaves it neither raw nor mushy: it is a pleasure to eat. Almost all vegetables may be stir-fried. Use vegetables in season imaginatively and creatively.
