beansBeans contain varying amounts of protein, carbohydrate, vitamins and minerals. They are an excellent source of fibre, especially soluble fibre, which helps to lower blood cholesterol levels. They are also low in fat.

Beans are a useful source of protein, especially for vegetarians. This protein is enhanced if the beans are eaten with a starchy non-meat protein, such as bread or rice (e.g. baked beans on toast, or chilli beans and rice).

Cooking dried beans

Dried beans, such as red kidney beans, contain natural toxins that need to be de-activated before use. Make sure that dried beans are soaked for 6-8 hours or overnight, drained and boiled hard in fresh water for at least 10 minutes before cooking.
