Making cakes by the creaming method with an electric food mixer

1. Carefully weigh or measure all the ingredients needed and use at room temperature.

2. Warm bowl and beater by placing beater in bowl half filled with hot water for a few minutes. Empty and dry thoroughly.

3. Cut up the Stork and place it in the warmed bowl, with the sugar. Turn on the mixer at a low speed to blend the Stork and sugar; then turn to a higher speed to cream the mixture until it is light and fluffy. Watch this process carefully; the colour of the mixture changes from pale yellow to almost white. From time to time, turn off the mixer and scrape down the sides of the bowl.

4. Add the eggs, one at a time again scraping down at intervals, so that the Stork and sugar are thoroughly mixed with the egg, and all the sugar is dissolved. Add a little of the sieved flour with every egg after the first to prevent the mixture curdling.

5. Turn off the mixer, then add the remaining ingredients (according to recipe used). Turn the mixer on again, but at its lowest speed. See that all the ingredients are blended thoroughly together, but be careful not to over-mix or the cake may sink in the middle.

6. Place the cake mixture in the prepared cake tin and bake as directed in the recipe.
