2 eggs
2 tablespoons milk
salt
freshly ground black
pepper

1 teaspoon butter
25 g (1 oz) slice lean
cooked ham, diced
25 g (1 oz) grated one-day
old cheese


1. Break the eggs into a 600 ml (1 pint) jug or bowl. Beat in the milk, then add salt and pepper to taste and the butter.
2. Cook for 1 minute, then stir vigorously, breaking up the bracelet of egg that forms around the sides of the mixture.
3. Stir in the ham. Cook for 1 minute, stir in the cheese and cook for a further 15 seconds, or until the egg is cooked to the desired consistency. Do not overcook as the egg will continue to coagulate over the next 30-60 seconds. Serve on a warmed plate with Mixed Diced Vegetables.
