Cabbage Parcels

Ingredients

  • 12 large cabbage leaves, stalks removed
  • Fry Light, for spraying
  • 1 onion, chopped
  • 1 carrot, coarsely grated
  • 170g/6 oz potato, coarsely grated
  • 283g/10 oz mushrooms, sliced
  • 2 tbsp soy sauce
  • good pinch dried thyme
  • 1 tbsp tomato ketchup
  • salt & ground black pepper

Preheat oven to 190°C, 375°F, Gas Mark 5. In a saucepan of boiling water cook the cabbage leaves for approximately 5 minutes until they begin to wilt. Drain but reserve 142ml / 1/4 pint of the water. Pat the leaves dry with kitchen paper. Spray a non-stick frying pan with the Fry Light and fry the onion, carrot and potatoes for 5 minutes. Add the mushrooms, soy sauce, thyme, ketchup and seasoning and continue cooking for 10-15 minutes until the vegetables are tender. Leave to cool. To make the parcels, spread the cabbage leaves out onto a flat surface, side down and place a spoon full of the vegetable mixture at the stalk end. Fold the sides of the leaf over the middle to encase the filling and roll up. Place the Parcels, join side down in a small roasting pan and pour in the reserved cabbage water. Cover with foil and bake for approximately 30 minutes until the leaves are tender.
