450g (1 lb) fresh spinach
salt

freshly ground black
pepper

pinch of ground nutmeg
(optional)
chopped almonds
(optional), to garnish



1. Wash the spinach in cold water and discard the thick stems. Drain thoroughly but do not dry.
2.  Place the spinach in a roaster bag and seal with an elastic band (not a metal tag).
3. Cook for 4 1/2 minutes or until the spinach leaves collapse and darken slightly. Using oven gloves, tilt the bag so that the excess liquid drains through the opening. Then remove the elastic band, turn out the spinach and chop with scissors ora sharp knife.
4. Season to taste with salt, pepper and nutmeg and serve hot or cold, garnished with chopped almonds.
