300ml (1\2 pint) well-
flavoured chicken stock
50 g (2 oz) vermicelli
1/2 teaspoon soy sauce


salt
freshly ground black
pepper
chopped parsley, to
garnish


1. Pour the stock into a medium bowl, partly cover with cling film and cook until boiling, about 3 minutes.
2. Stir in the vermicelli, three-quarters cover and cook for 4 minutes without stirring.
3. Carefully uncover, stir in the soy sauce and add salt and pepper. Leave to stand for 3-4 minutes before serving, garnished with chopped parsley.
