Name Leeks in Cider Sauce

* 1lb (450g) leeks
* 1/4 pint (150ml) cider
* salt
* freshly ground black pepper
* 1oz (25g) beurre manie
* freshly chopped parsley, to serve

Trim the leeks and cut them into 2 inch (5cm) lengths. Arrange in a shallow microproof dish, pour the cider over, sprinkle with a little seasoning and cover with pierced clear film or a lid and cook on full power for 10 minutes, turning the leeks over once during cooking. Stir in the beurre manie until well mixed and slightly thickened. Sprinkle with lots of freshly chopped parsley to serve.
