9Ingredients:

* 5 medium-sized aubergines

* ½ medium-sized cabbage

* 2 medium-sized carrots

* 3 medium-sized onions

* salt and spices

Cooking:

1. Scald the aubergines to remove bitterness. Dice.

2. Put in a pan with heated oil.

3. Dice the carrots. Add to the aubergines and stew. Add chopped cabbage.

4. Dice the courgettes. Add to the ragout. Stew until ready.

5. Add sautéed onions, stir, cover, and leave to rest.
