Asparagus with orange-flavoured hollandaise sauceImperial
1 1/2 lb asparagus
3-4 tablespoons water
For the sauce
4 oz butter
4 tablespoons double cream
3 egg yolks
juice of 1/2 lemon
juice and grated rind of 1 small orange
salt and freshly ground white pepper


Metric
750 g asparagus
3-4 x 15 ml spoons water
For the sauce
100 g butter
4 x 15 ml spoons double cream
3 egg yolks
juice of 1/2 lemon
juice and grated rind of 1 small orange
salt and freshly ground white pepper


Trim the asparagus. Arrange in a large shallow dish with the tips towards the centre. Sprinkle with water. Cover loosely with cling film and MICROWAVE ON HIGH for 7-9 minutes until the tips are just tender. Give the dish a half-turn once during cooking. Leave to stand covered, while making the sauce.
Put the butter in a bowl and MICROWAVE ON HIGH for 1 minute until melted. Add all the remaining ingredients and whisk until smooth. MICROWAVE ON LOW for 4-5 minutes until the sauce thickens, beating vigorously every minute during cooking. Carefully transfer the asparagus to a warmed serving dish.
Pour the orange sauce info a sauceboat and serve separately.
