* 1 ripe pineapple
* 75 g (3 oz) soft brown sugar
* 1/2 teaspoon ground ginger
* 50 g (2 oz) desiccated coconut
* strawberries, to decorate

1. Cut a fresh pineapple into thin rings. Place each ring on a separate square of foil and sprinkle with a little brown sugar and pinch of ginger. Top with desiccated coconut. Wrap the foil securely around the pineapple slices and seal.
2. Cook the foil parcels over warm coals on a preheated barbecue for 10-15 minutes. Serve on individual plates, decorated with strawberries.
