Tomato Rice


  • Fry Light for spraying
  • 2 medium onions, chopped
  • 1 tsp ginger root, finelly chopped
  • 1 garlic clove, crushed
  • 1/2 tsp dried turmeric
  • 1 tsp chilli powder
  • 1 1/2 tsp salt
  • 397 g/14 oz can chopped tomatoes
  • 454g/1 lb basmati rice
  • 568ml/1 pt water
  • fresh parsley, to garnish

Spray a frying pan with Fry Light and cook the onions until golden brown. Add the ginger, garlic, turmeric, chilli powder and salt and stir well to combine. Reduce the heat, add the tomatoes and stir fry for 10 minutes. Gently stir in the rice and add the water. Cover the frying pan and simmer on a very low heat until the water is absorbed and the rice is tender. Transfer to a serving dish and garnish with the parsley before serving.

Cook's tip: Do not stir the rice again after adding the water.
