Meat Puffs


  • 3 tablespoons self-raising flour
  • 3 eggs, beaten
  • 5-6 tablespoons water
  • 250 g (8 oz) lean minced beef
  • 1 bunch spring onions, trimmed and finely sliced
  • 1 green chilli, deseeded and finely chopped
  • 1 teaspoon turmeric
  • vegetable oil, for frying
  • salt, to taste

Sift the flour into a bowl, add the eggs and then beat well to combine. Gradually add enough water to make a thick, creamy batter, beating well all the time.
Stir in the minced beef, spring onions, chilli, turmeric and salt to teste; the mixtureshould have the
consistency of stiff porridge. Leave to stand in a warm place for 1 hour.
Heat about 1 cm (1/2 inch) depth of oil in a frying pan. When the oil is really hot, drop in spoonfuls of the meat mixture and fry on each side for 2 minutes until crisp and golden brown. Drain the puffs well and keep warm while cooking the remainder, adding more oil as required. Serve them immediately.
