* 3 slices white bread (from a large sliced loaf), crusts removed
* 150 ml (1/4 pint) soda water
* 250 g (8 oz) minced veal
* 250 g (8 oz) minced pork
* 50 g (2 oz) ham, finely chopped
* 1 teaspoon juniper berries, crushed
* 2 egg yolks
* salt and pepper
* oil, for brushing
To serve:
* 4 large slices rye bread, spread with unsalted butter
* 1 onion, cut into thin rings
* 2 dill cucumbers, cut into fingers
* 2 tablespoons capers
* 150 ml (1/4 pint) soured cream
