100 g (4 oz) carrots, peeled
2 tablespoons water
1 teaspoon butter
1 teaspoon sugar
(optional)

salt
freshly ground black
pepper
2 sprigs parsley


1. Cut the carrots diagonally into thin slices.
2.  Put the water, butter and sugar, if using, in a bowl or dish and sprinkle with salt.
3. Stir in the carrots, cover with cling film and cook for 3 minutes. Stir, then replace the cover and cook for a further 2 minutes or until the carrots are tender. Drain if necessary and top with the parsley sprigs.
