MARINATED-DICED-BREAST-OF-CPREPARATION TIME: about 10 minutes
COOKING TIME: about 10 minutes, plus marinating
MICROWAVE SETTING: Maximum (Full)

Marinade:
5 tablespoons dry white
wine                                         
1 tablespoon olive oil

4 tablespoons fresh orange
juice                                        
grated rind of 1/2 orange

1/4 teaspoon fresh rosemary
leaves
1/4 teaspoon dried thyme
leaves

1/4 teaspoon dried marjoram
leaves                                     
1/2 garlic clove, crushed        
1/2 teaspoon salt

1/4 teaspoon freshly ground
black pepper
225 g (8 oz) raw skinned
chicken breast, cubed            
orange quarters, to garnish

sprig of rosemary, to
garnish


1. Combine the 10 marinade ingredients and stir in the chicken cubes. Cover and leave in the refrigerator for at least 2 hours, stirring 2 or 3 times during marinating.
2.  Remove the chicken cubes, strain the marinade to remove the herbs, then mix the chicken and marinade in a 1.2 litre (2 pint) bowl. Three-quarters cover with cling film or a vented lid and cook for 4 minutes or until the chicken istender, stirring oncQ during cooking.
3.  Using a slotted spoon, transfer the chicken cubes to a hot serving dish, cover and keep warm.
4. Uncover the marinade and cook for 6 minutes or until only about 2 tablespoons of the liquid remain. Pour over the chicken and serve hot or cold, garnished with orange quarters and rosemary.
