2 large green peppers
1 x 7 oz can tuna, drained
1 tablespoon lemon juice
3 oz cooked rice
salt and freshly ground pepper
1 egg, beaten
1/4 pint water


Metric
2 large green peppers
1 x 200 g can tuna, drained
1 x 15 ml spoon lemon juice
75 g cooked rice
salt and freshly ground pepper
1 egg, beaten
150 ml water


Cut a slice from the top of each pepper and set aside, then scoop out the core and seeds. Flake the tuna and mix with the lemon juice, rice and seasoning. Bind the stuffing with the beaten egg.
Pile into the peppers, replace the lids and put into a shallow dish into which they fit tightly. Pour in the water, cover with cling film and MICROWAVE ON HIGH for 10-12 minutes until the peppers are tender. Leave to stand for 2 minutes then drain.
Serves 2
VARIATION: The tuna may be replaced with 100 g/4 oz smoked cod, flaked with 2 chopped hard-boiled eggs, or 100 g/4 oz cooked minced beef mixed with 3 x 15 ml spoons/3 tablespoons tomato puree and 1 x 2.5 ml spoon/0.5 teaspoon onion salt.
