2 large open flat
mushrooms, at least 7 1/2cm
(3 inches) in diameter
15 g (1/2 oz) butter
1 small onion, finely
chopped
salt
freshly ground black
pepper

4 tablespoons fresh brown
breadcrumbs
1 teaspoon mixed dried
herbs
1/4 teaspoon Worcestershire
sauce
1 tablespoon sherry
1/2 beaten egg
15 g (1/2 oz) slivered flaked
almonds


1. Wipe the mushrooms, remove and chop the stems. Set the caps aside.
2.  Put the butter in a medium bowl and cookfor 30 seconds or until melted. Add the chopped stems and the onion and cookfor 2 minutes or until the onions are soft. Season to taste with salt and pepper.
3.  Mix in the breadcrumbs, herbs, Worcestershire sauce and sherry. Bind with the beaten egg. Stir in the almonds.
4.  Pile the mixture on to the dark side of the mushrooms and cook, uncovered, for 1 minute. Turn the dish and cook for a further minute. Serve hot or cold with lettuce and watercress.
