1 large onion, finely chopped
1 tablespoon tomato puree
1 beef stock cube, crumbled
1/2 pint beef stock
12 oz cooked minced beef
1 tablespoon flour
salt and freshly ground pepper
1 lb potatoes, peeled and cubed
4 tablespoons water
1/2 oz butter
6 tomatoes, pricked


Metric
1 large onion, finely chopped
1 x 15 ml spoon tomato puree
1 beef stock cube, crumbled
300 ml beef stock
350 g cooked minced beef
1 x 15 ml spoon flour
salt and freshly ground pepper
500 g potatoes, peeled and cubed
4 x 15 ml spoons water
15 g butter
6 tomatoes, pricked


Place the onion, tomato puree, stock cube and stock in a large shallow dish. Cover and MICROWAVE ON HIGH for 10 minutes, stirring occasionally. Toss the meat in the flour, then stir into the onion mixture. Cover and MICROWAVE ON HIGH for 10 minutes, stirring occasionally. Season and leave to stand while cooking the potatoes.
Put the potatoes in a large shallow dish, add the water and cover with cling film. MICROWAVE ON HIGH for 10-12 minutes until soft, shaking the dish two or three times during cooking. Drain and mash with the butter. Arrange the tomatoes on top of the meat mixture. Cover with mashed potato. MICROWAVE ON HIGH for 5 minutes, giving the dish a quarter-turn every minute. Place under a preheated hot grill to brown before serving.
