POTTED BEEFIngredients:
500 g beef,
3/4 tbsp lard for searing meat,
1 carrot,
1 parsley root,
1/2 onion,
1 tbsp flour,
1 tbsp tomato puree,
3/4 cup sour cream,
300 g fresh or 50 g dried mushrooms,
1 kg potatoes,
1/2 tbsp lard for frying potatoes,
1/2 cup mushroom stock with meat drippings,
salt, pepper, parsley sprig and dill.

Cut meat into small cubes, sprinkle with salt and pepper, sear on all sides, put into casserole or saucepan, add sliced carrot and parsley root, chopped onion, fill with stock and simmer. Prepare fresh or dried mushrooms, cut them into pieces and slightly fry with onion.
Cut peeled potatoes into chips, fry. Place in oven for 20 min till done. Gravy: sear flour to light brown, saute" the tomato puree, mix with flour, dilute with meat drippings and mushroom stock, heat to the boiling point, add sour cream, let cook for a while, season with pepper.
Fill a roast pan with fried potatoes, stewed meat, top with mushrooms and fried onions, pour on gravy, sprinkle with chopped parsley and dill. Bake in oven. Prior to baking, seal the pan with pastry topping. Pastry is made of 1 cup flour, 1 egg, 1 tsp sugar, a pinch of salt, V2 tbsp vegetable oil or margarine.
