4 oz macaroni
1 pint boiling water
salt and freshly ground pepper
1/2 oz butter
2 bacon rashers, rinds removed and chopped
1 oz flour
1/2 teaspoon mustard powder
1/2 pint milk
4 oz Cheddar cheese, finely grated
tomato slices


Metric
100 g macaroni
600 ml boiling water
salt and freshly ground pepper
15 g butter
2 bacon rashers, rinds removed and chopped
25 g flour
1 x 2.5 ml spoon mustard powder
300 ml milk
100 g Cheddar cheese, finely grated
tomato slices

Place the macaroni in a deep dish and stir in the water and salt. MICROWAVE ON HIGH for 5 minutes, cover and leave to stand while preparing the sauce. Combine the butter and bacon in a large bowl and MICROWAVE ON HIGH for 1-1 1/2 minutes until the bacon is lightly cooked. Add the flour and mustard, then gradually stir in the milk. MICROWAVE ON HIGH for 3 - 4 minutes, whisking frequently, until the sauce thickens. Drain the macaroni and stir into the sauce with the cheese. Season and garnish with tomato slices.
