4 x 5 oz fillet steaks
1 oz butter
2 teaspoons Worcestershire sauce
For the sauce
1 small onion, finely chopped
2 tablespoons vegetable oil
1 tablespoon flour
5 tablespoons canned beef consomme
5 tablespoons water
1/4 pint red wine
1 tablespoon brandy


Metric
4 x 150 g fillet steaks
25 g butter
2 x 5 ml spoons Worcestershire sauce
For the sauce
1 small onion, finely chopped
2 x 15 ml spoons vegetable oil
1 x 15 ml spoon flour
5 x 15 ml spoons canned beef consomme
5x 15 ml spoons water
150 ml red wine
1 x 15 ml spoon brandy


Spread the steaks with  butter and brush with Worcestershire sauce. Cover and set aside.
For the sauce, combine the onion and oil in a large shallow dish and MICROWAVE ON HIGH for 3 minutes. Stir in the flour and MICROWAVE ON HIGH for 2 minutes. Add the consomme, water, wine and brandy and MICROWAVE ON HIGH for 5-7 minutes, stirring occasionally until thickened and browned. Cover and set aside.
Preheat a large browning skillet for 5 minutes. Quickly add 2 steaks, turning them over almost immediately. MICROWAVE ON HIGH for 2 minutes, turn over, then MICROWAVE ON HIGH for 2-3 minutes until cooked according to taste. Add to the sauce. Wipe out the skillet with absorbent kitchen paper. Reheat for 4 minutes, then MICROWAVE the remaining steaks. Add to the sauce and MICROWAVE ON HIGH for a further 3 minutes to reheat thoroughly.
Serves 4
NOTE: To cook the steaks simultaneously, MICROWAVE ON HIGH for 6-10 minutes. This method will not produce a crisp finish.
