pruneCut the toast into 4 x 6 cm/2 x 3 inch fingers. Trim the bacon to fit the toast. Place between a folded sheet of absorbent kitchen paper. Stuff the prunes with the anchovies. Cook the bacon and prunes at the same time. MICROWAVE ON HIGH for 6 minutes or until cooked.
Lay the bacon on the toast and arrange the prunes on top. Place on individual plates and MICROWAVE ONÂ HIGH for 2 minutes. Serve garnished with parsley sprigs.
