CUCUMBER-PISELLIPREPARATION TIME: about 10 minutes

1/2 large cucumber, peeled
100 g (4 oz) fresh or frozen
peas                                    
4 tablespoons salted water

1 sprig mint

3 tablespoons double
cream
2 teaspoons chopped fresh
parsley, to garnish
watercress, to garnish

1. Halve the cucumber crossways. Cut through the middle of each lengthways. Remove the seeds.
2.  Place the 4 cucumber pieces, hollows uppermost in a single layer in a small dish. Cover with cling film, vent and cook for 2 minutes or until tender. Drain thoroughly.
3.  Put the peas, salted water and mint in a dish. Cover, vent and cook for 3 minutes, then drain. Puree the peas and mint with the cream, then spoon into the cucumber. Garnish with parsley and watercress. Serve warm.
