225 g (8 oz) spring greens,
washed and drained

1 x 285 ml (10 fl oz) ready-
to-use can cream of leek
soup
spring onion rings, to
garnish


1. Trim away the coarse stalks from the greens and shred the leaves.
2.  Put the leaves in an 18cm (7 inch) round dish.
3.  Pour the soup over the greens, cover with cling film, pulling back one corner to vent, and cookfor 5 minutes. Turn the dish, then cook for a further 5 minutes. Leave for 5 minutes before carefully removing the cling film. Garnish with the spring onion and serve hot.
