Chick Pea & Pepper Curry
Ingredients
- 1 yellow pepper, deseeded & sliced
- 1 green pepper, deseeded & sliced
- 1 onion, chopped
- 2 carrots, chopped
- 2 garlic cloves, crushed
- 397g/14 oz can plum tomatoes, chopped
- 1 tsp freshly chopped coriander
- 3 level tbsp curry powder
- 1 vegetable stock cube, crumbled
- salt & ground black pepper
- 397g/14 oz can chick peas, drained
Place the vegetables, garlic, tomatoes and coriander into a microwaveable dish. Sprinkle over the curry powder and stock cube and add seasoning to taste. Cook in the microwave on medium power for 15 minutes. Stir in the chick peas and cook for a further 5 minutes until the sauce thickens. Serve immediately.
