Fancy Veggie Rosti


  • 340g/12 oz potatoes, grated
  • 170g/6 oz sweet potato, grated
  • 283g/10 oz parsnips, grated
  • 3 spring onions, chopped finely
  • small onion, chopped
  • handful freshly chopped coriander
  • 1 egg, beaten
  • salt & ground black pepper
  • Fry Light, for spraying

Squeeze as much juice as possible from the grated vegetables and place in a bowl. Add the spring onions, onion, coriander and egg, combine well and season to taste. Divide the mixture into 4 portions and shape each one into a rosti shape. Spray a non-stick frying pan with the Fry Light and fry the rostis on both sides for approximately 10 minutes until golden brown and cooked through.
