Cheese & Chive Baked Potatoes


  • 4 x 227g/8 oz baking potatoes
  • 57g/2 oz quark skimmed milk soft cheese
  • 3 tbsp freshly chopped chives
  • 57g/2 oz sweetcorn, canned
  • 1 tbsp very low fat natural fromage frais
  • ground black pepper
  • 42g / 1 1/2 oz reduced fat cheddar cheese, grated

Preheat the oven to 190°C, 375°F, Gas Mark 5. Wash and scrub the potatoes, dry thoroughly, then prick all over with a fork. Place the potatoes in the oven and bake for approximately 1 hour until tender. Cut the potatoes in half, scoop out the flesh and place in a mixing bowl, reserving the empty potato skins. Mash the potato flesh, mix in the quark, chives, sweetcorn, fromage frais and pepper and then spoon the mixture back into the skins. Place on a baking sheet and sprinkle the potato halves with the cheese. Place under a preheated hot grill until the topping has melted and is golden brown. Serve hot, with a mixed salad and grilled tomatoes.
