Ingredients:
* 200 g (7 oz) long grain rice
* 4 shallots, cut into very fine rings (or use 2 small onions, peeled and sliced)
* approximately 250 ml (8 fl oz) vegetable oil
Omelette:
* 1 egg
* salt
* 1/4 tsp caster sugar
* 1/2 tsp water
Stir-fry:
* 1 chicken breast, cut into small strips
* 1 clove garlic, crushed
* a pinch of mild chilli powder 100 g (4 oz) cooked prawns 4 spring onions, sliced
* 2 tbsp soy sauce
* 1 tbsp fresh chopped parsley
