Moorish Chick Peas
Ingredients
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 1 green pepper, deseeded & sliced
- 2 x 397g/14 oz cans chick peas, drained
- 397g/14 oz can chopped tomatoes
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp cayenne pepper
- salt & ground black pepper to taste
- l98g/7 oz can sweetcorn
Place all the ingredients, except the sweetcorn, in a large saucepan. Bring to the boil, cover and simmer for 20 minutes until the onions and pepper are tender. Season to taste and add the sweetcorn just before serving. Can be served hot or cold.
