Middle Eastern Style Green Beans
Ingredients
- 1 large onion, finely sliced in half rings
- 1/4 tsp cayenne pepper
- 1/2 tsp allspice
- 1 tsp ground cumin
- 2 garlic cloves, crushed
- 454g/l lb fine green beans, cut into 3cm lengths
- 198g/7 oz can chopped tomatoes
- salt & ground black pepper
Dry fry the onion in a large heavy saucepan for approximately 5 minutes until it begins to soften. Add the spices and garlic and stir for a further minute. Add the beans, tomatoes, one full can of water and season to taste. Bring to the boil and simmer for 15-20 minutes until the beans are tender. Leave to cool. This dish is normally served at room temperature, but it can also be served hot.
