Spinach and bacon party roll-ups


  • 16 rashers lean back bacon, fat removed (32 Sins on Green)
  • 227 g/8 oz fresh spinach leaves, trimmed OR frozen spinach
  • 85 g/3 oz very low fat natural fromage frais
  • 2 spring onions, finely chopped
  • 1 level teaspoon reduced calorie mayonnaise (1 Sin)
  • salt and freshly ground black pepper

1. Stretch the bacon rashers out with the back of a knife and cut each one in half lengthways. Grill until cooked but not too crisp. Set aside to cool.

2. Wash and dry the spinach leaves and place in a large pan over low heat. Cover and cook, shaking the pan occasionally, for 2—3 minutes, until the leaves wilt and turn bright green. Drain in a colander, pressing down with a saucer to squeeze out any water. Leave to cool a little.

3. If using frozen spinach, cook according to the manufacturer's instructions on the packet, then drain thoroughly and cool.

4. Chop the spinach and mix in a bowl with the fromage frais, spring onions and mayonnaise. Season to taste with a little salt and pepper and chill until firm.

5. Put a little of the spinach filling on each bacon rasher and roll up tightly. Place in a sealed container and chill in the refrigerator until required.
