Easy Peasants Paella


  • 1 large onion, chopped
  • 3 tomatoes, chopped
  • 350g pack Quorn Pieces
  • 397g/14 oz can butter beans, drained
  • 397g/14 oz can runner beans, drained
  • 227g/8 oz pudding rice
  • salt & ground black pepper
  • 568ml/1 pt hot water
  • saffron or yellow food colouring

Dry fry the onion, tomatoes and Quorn Pieces in a large heavy based saucepan until tender. Stir in the butter beans, runner beans and pudding rice adding a little water if necessary so that the mixture remains moist. Season to taste. Add the hot water, saffron or colouring to the mixture and simmer for 25-30 minutes until the rice is cooked, do not stir again. Serve with a fresh green salad.
