Spicy Quorn Madras Curry with Mint Yogurt Dressing


  • Dressing:
  • 2 tsp dried mint
  • 2 tsp lemon juice
  • 142g/5 oz very low fat natural yogurt
  • salt & ground black pepper
  • Curry:
  • 1 tbsp tomato puree
  • 284ml / 1/2 pt water
  • 1 tbsp lemon juice
  • 2 tsp curry powder, Madras or Korma
  • 1 tsp freshly chopped coriander
  • 1 garlic clove, crushed
  • salt & ground black pepper
  • Fry Light, for spraying
  • 1 medium onion, chopped
  • 350g pack Quorn Pieces
  • 2 tbsp very low fat natural fromage frais

Mix all the dressing ingredients together in a bowl and chill until ready to serve. In a bowl combine the tomato puree, 2 tablespoons water, lemon juice, curry powder, coriander, garlic and seasoning to form a paste. Leave to infuse for 10-15 minutes. Spray a non-stick pan with Fry Light and fry the onion and Quorn Pieces for 2-3 minutes. Add the curry paste and stir for 1 minute. Pour in 142ml / 1/4 pint of the water, stir and bring to the boil. Add the remainder of the water and again bring to the boil. Simmer for 15 minutes. Remove from the heat and stir in the fromage frais. Serve with the yogurt dressing.
