Scrambled eggs

Ingredients

  • 3 eggs
  • salt and freshly ground black pepper
  • few snipped chives (optional)
  • Fry Light, for spraying

1. Break the eggs into a small bowl. Add a little salt and pepper and the chives (if using) and beat together with a fork or a whisk, until the yolks and whites are combined.

2. Spray a small saucepan lightly with Fry Light and heat over a medium heat. Add the eggs, reduce the heat and stir gently for 2-3 minutes, until they start to scramble and set. Remove the pan from the heat and spoon the eggs on to a warm serving plate.

Variations

Smoked salmon and chives

For a gourmet version, add 57 g/2 oz chopped smoked salmon (4 Sins on Green) and a few snipped chives to the beaten eggs. Cook as directed above.

Tomato and basil

Add 1 skinned, deseeded and chopped ripe tomato and 2 shredded basil leaves to the beaten eggs, then cook as directed.

Watercress and whole-grain mustard

Add a little chopped watercress and 1/2 level teaspoon whole-grain mustard (1/2 Sin) to the whisked eggs. Beat together and cook as before.

Thai chilli and coriander

Add 1/2 red bird's eye chilli, which has been deseeded and finely chopped, 1/4 teaspoon finely chopped peeled root ginger and a few chopped coriander leaves to the beaten eggs. Then cook as usual.

Poached mushrooms

Gently cook 57 g/2 oz finely chopped mushrooms in 57 ml/2 fl oz vegetable stock (negligible Sins), until tender. Strain and stir into the egg mixture in the pan with 1 tablespoon finely chopped parsley. Cook as before.

Crab meat and dill

Add 57 g/2 oz boiled crab meat (3 1/2 Sins on Green) and a little chopped dill to the beaten eggs before cooking. You could also add a splash of chilli sauce, if wished.

Smoked haddock

Add 57 g/2 oz flaked cooked smoked haddock (2 1/2 Sins on Green) to the beaten eggs with Vl teaspoon chopped parsley. Cook as usual.

Ham and parsley

Add 57 g/2 oz chopped lean ham with fat removed (5 Sins on Green) and 1/2 teaspoon chopped parsley to the eggs. Scramble as before.
