1. Peel, core and slice the apples. Mix the sugar, cinnamon and salt together and, starting with apples, layer in a 450 ml (3/4 pint) oval flameproof dish. 2. Spread the bread cubes over the apple and sprinkle with the desiccated coconut. Spoon the honey on top and cover with cling film. 3. Pull back one corner of the cling film to vent and cook for З 1/2 minutes. Turn the dish round and cook for a further З 1/2 minutes or until the apple is cooked. 4. Carefully remove the cling film and top the pudding with dabs of butter. Brown under a preheated conventional grill. Serve hot or cold with whipped cream or custard.
