1 tablespoon tomato puree pinch of dried basil 1-2 pinches chilli powder salt freshly ground black pepper cucumber twist to garnish
1. Put the onion and green pepper into a 1.2 litre (2 pint) pudding basin and cook for 2 minutes to soften. 2. Add the minced beef, kidney beans, bean liquid, tomato puree, basil and chilli powder to taste. Stir thoroughly, then three-quarters cover with cling film and cook for 5-6 minutes or until the beef is cooked and the mixture is still moist. 3. Remove the cling film, add salt and pepper to taste and serve hot, garnished with the cucumber.
