Bubble & Squeak


  • 454g/1 lb floury potatoes (eg, Maris Piper or King Edward)
  • 227g/8 oz Savoy cabbage
  • Fry Light, for spraying
  • 2 leeks, chopped
  • 1 garlic clove, crushed
  • 227g/8 oz smoked tofu, cubed
  • salt & ground black pepper
  • shredded cooked leek, to garnish

Cook the potatoes in a large pan of boiling water for about 10 minutes until tender, drain and mash in a bowl. In a saucepan of boiling water cook the cabbage for 5 minutes, drain and add to the potato. Spray a heavy based frying pan with the Fry Light and fry the leeks and garlic on a low heat for 2-3 minutes. Stir into the potato and cabbage mixture, add the tofu and season to taste. Transfer the mixture to the frying pan and fry over a medium heat for 10 minutes. Carefully turn the mixture over and cook for a further 5-7 minutes until the base is crispy. Serve hot, garnished with the shredded leeks.
