Easy Vegetable Soup
Ingredients
- 170g/6 oz leeks, chopped
- 142g/5 oz carrots, chopped
- l42g/5 oz onions, chopped
- 142g/5 oz celery, chopped
- 2 garlic cloves, crushed
- 1/2 tsp black pepper
- 57g/2 oz yellow split peas, soaked
- 568ml/1 pt stock made with Vecon
- salt & ground black pepper
Place all the ingredients into a saucepan and bring to the boil, simmering for 15-20 minutes until the vegetables are tender. For a smoother consistency transfer the soup into a blender and puree before returning to the saucepan to heat through. Season to taste before serving.
